I'm still not sure yet, but I think I'll go the same way as you, encrypting the whole drive (for simplicity and "uniformity", let me call it that way) and, if needed, install VeraCrypt on another PC and mount it from there. You just click through it, and mount the drive with VeraCrypt normally. It's because Windows doesn't know what to do with the drive since it doesn't realize that it's encrypted by VeraCrypt. The only danger is that Windows may pop up a message saying that the drive needs to be formatted before it can be used, and doing so would wipe out your data. I have encrypted lots of external hard drives, and I usually just encrypt the whole thing (the entire drive, not just a partition). Create a single partition, and then create an encrypted container as a file taking up most of the space.The other (small) one would be exFAT, NTFS, or FAT32 so that you could access and execute the VeraCrypt executable. Create two partitions on the hard drive, and encrypt one of them.I think you could do this in (at least) a couple of ways: If you're always going to have admin rights on the PC where you mount the drive, then cool.
